Recipe: Bone Marrow Banana Fritters

Melissa shared, “This was a staple with my babies, I mixed it into everything! Pureed pears, sweet potatoes, apples, carrots etc.”

First, Prep the Bone Marrow


Ingredients:

  • 3-5 pounds marrow bones

Directions:

Preheat oven to 450°F. Place marrow bones on a cookie sheet covered in parchment, bone side down. Roast until the bones are lightly browned, about 20 minutes. Some fat will render from the bones, but the majority of the marrow should stay in the bone. To whip the marrow... scoop marrow from cooled bones and place in a bowl. Refrigerate for 10 minutes. With a hand mixer or stand mixer whip cooled marrow until fluffy. Store in freezer or fridge. I would divide into silicone mold and freezer for easy access.

Bone marrow banana fritters

Ingredients

  • 3 tablespoons cassava flour

  • 1 tablespoon whipped bone marrow ( can also use coconut oil)

  • 1 very ripe banana

  • 1 teaspoon ghee

Instructions

  1. Make a quick batter by mashing ingredients with a fork.

  2. Heat a cast-iron pan over medium heat. When hot, add enough ghee to cover the bottom of the pan and reduce heat to low.

  3. Form the batter into patties and carefully place into the hot skillet. This recipe makes three fritters.

  4. Cook until the bottoms are browned and the fritters have set, around four minutes. They should feel firm to the touch.

  5. Remove from pan and cool on a wire rack. 👶
